For the Cake:

2 cups all-purpose flour
2 teaspoons baking powder

1/2 teaspoon ground ginger (optional)
1 cup granulated sugar
1/2 cup brown sugar
3/4 cup vegetable oil
4 large eggs
2 cups finely grated carrots
1/2 cup crushed pineapple, drained
1 teaspoon vanilla extract
1/2 cup chopped walnuts or pecans (optional)
For the Cream Cheese Frosting:

8 oz (226g) cream cheese, softened
1/2 cup unsalted butter, softened
4 cups powdered sugar
1 teaspoon vanilla extract


Instructions:

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ground ginger (if using). Set aside.

In a large mixing bowl, combine the granulated sugar, brown sugar, and vegetable oil. Mix until well combined.

Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.

Gradually add the dry flour mixture to the wet ingredients, mixing until just combined.

Fold in the grated carrots, crushed pineapple, and chopped nuts (if using).

Divide the batter evenly between the prepared cake pans and smooth the tops.

Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Remove the cakes from the oven and let them cool in the pans for about 10 minutes. Then, transfer the cakes to a wire rack to cool completely.

For the cream cheese frosting, beat the softened cream cheese and butter together until smooth and creamy.

Gradually add the powdered sugar, one cup at a time, while continuing to mix. Beat in the vanilla extract.

Once the cakes are completely cool, spread a layer of cream cheese frosting on top of one of the cake layers.

Place the second cake layer on top of the frosting.

Spread a generous layer of cream cheese frosting on the top and sides of the cake.

Optionally, decorate the cake with additional chopped nuts or grated carrots.

Slice and serve the easy and tasty carrot cake, and enjoy!
