Vienna Bread is a type of bread originating from Vienna, Austria, known for its golden, crispy crust. Its preparation includes ingredients such as high-quality flour, milk and butter, giving it a distinctive quality.
Ingredients:
• 500 g of wheat flour
• 10 g of salt
• 10 g of sugar
• 10 g dry yeast
• 300 ml of warm water
• 50 ml of milk
• 50 g of melted butter
• 1 egg (to brush the surface)
Make sure all ingredients are at room temperature for better fermentation and texture of the bread. Also, knead the dough enough to develop the gluten, but avoid overdoing it to prevent the bread from turning out dense.
Preparation:
1. In a large bowl, mix the flour and salt.
2. In another container, dissolve the sugar in warm water and add the yeast. Let it sit for a few minutes until it starts to foam.
3. Add the yeast mixture to the flour. Then, add the milk and melted butter. Mix well until forming a dough.
4. Knead the dough on a floured surface for about 10 minutes or until smooth and elastic.
5. Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm place for about 1 hour or until it has doubled in size.
6. Preheat the oven to 180°C.
7. Divide the dough into portions and shape the loaves according to your preference. You can make long or round loaves.
8. Place the loaves on a baking sheet and let them rest for about 15 minutes.
9. Beat the egg and brush the surface of the buns with beaten egg.
10. Bake in the preheated oven for about 20-25 minutes or until golden brown.
11. Remove from the oven and let cool before cutting.
