Sweet Potato Pea Triangles
Sweet potato pea triangles are a delectable appetizer or snack option that combines the earthy sweetness of sweet potatoes with the fresh, vibrant flavor of peas. To make these triangles, start by mashing cooked sweet potatoes and mixing them with cooked peas, spices like cumin, coriander, and a hint of chili powder for some heat.
Recipe:
▪️2 sheets of frozen puff pastry
▪️150g sweet potato (1 small potato)
▪️100g frozen peas
▪️2 cloves garlic, chopped
▪️1 tsp extra virgin olive oil
▪️1/2 tsp salt
▪️1 tsp garlic & herb seasoning
Plus:
▪️oil for brushing
▪️sesame seeds
1️⃣ Roast the sweet potato until tender. Add to a bowl and mash.
2️⃣ Add peas, garlic, salt, oil and seasoning. Mix together.
3️⃣ Thaw puff pastry before using. Cut into four squares. Spoon mixture into the middle of each piece of pastry. Fold over to form a triangle and press down the edges. Use a fork to seal edges.
4️⃣ Place the puff pastry into the air fryer (or on an oven safe tray if you are cooking in an oven) using baking paper at the bottom so they don’t stick. Brush with oil and sprinkle with sesame seeds.
5️⃣ Cook for approx 8 mins at 180°C in an air fryer (until golden brown) then gently flipping over and cooking the bottom for the same amount of time.
6️⃣ If cooking in an oven, cook for 15 mins at 180°C or until golden brown (no need to flip) you may have an air fryer that doesn’t require flipping.
