Chocolate rolls

Chocolate rolls

The chocolate rolls are juicy, delicious and vegan even without eggs.  The yeast dough with yogurt and chocolate chips is simply perfect.  They taste best homemade. 

INGREDIENTS (For 10 pieces)

FOR THE DOUGH
200 ml plant milk (e.g. oat drink)
500 g wheat flour (type 550; alternative: spelled flour type 630)
80g sugar
1 tsp salt
A little ground vanilla if desired
80g soft vegan butter
60g vegan yogurt
½ cube of fresh yeast (21 g; alt.: 1 packet of dry yeast)

ASIDE FROM THAT

100 g dark chocolate drops
2 – 3 soy cream (for cooking)

PREPARATION

1st step
For the dough, put the plant drink in a pot and warm it slightly (lukewarm).  Meanwhile, mix flour, sugar and salt in a large bowl.  Add some ground vanilla if desired.

2nd step
Add soft vegan butter in flakes, vegan yoghurt and lukewarm plant-based drink, do not mix.  Crumble fresh yeast into small pieces and add to the warm liquid in the bowl.  Let it rest for about 5 minutes until the yeast has dissolved in the drink.

3rd step
If there are no more pieces of yeast to be seen, first mix all the ingredients with a wooden spoon, then knead with your hands or place in a food processor.  Knead the dough until smooth for about 10 minutes.

4th step
Place the dough in a clean bowl and cover with a damp kitchen towel.  Let rise in a warm, not draughty place for at least 1 hour until approximately doubled in volume.
