Homemade croissants

Homemade croissants

A croissant is a delicious bun of French origin, known for its half-moon shape and flaky texture.  It is commonly enjoyed at breakfast or as a snack, and can be filled with chocolate, jam, or simply enjoyed with coffee.  Its buttery aroma and flavor make it irresistible for many pastry lovers.

Ingredients

For the mass:

• 500 grams of wheat flour

• 10 grams of salt

• 50 grams of sugar

• 10 grams of fresh yeast or 5 grams of dry yeast

• 250 ml of warm milk

• 250 grams of cold butter (for the puff pastry)

For the puff pastry:

• 250 grams of cold butter (for the puff pastry)

• 1 egg (for the glaze)

• A pinch of salt (for the glaze)

Make sure you have all the ingredients and utensils ready before you start making the croissants for a more efficient kitchen experience.  Enjoy baking!

Preparation

1. Dissolve the yeast in the warm milk and let it sit for a few minutes until it begins to foam.

2. In a large bowl, mix the flour, salt and sugar.  Then, add the yeast and milk mixture.

3. Knead the dough for about 10 minutes until it is smooth and elastic.  If the dough is very sticky, you can add a little more flour.

4. Form the dough into a ball, cover the bowl with plastic wrap and let it rest in the refrigerator for at least 1 hour or until it has doubled in size.

5. Meanwhile, prepare the puff pastry.  Spread the cold butter between two sheets of parchment paper in the shape of a rectangle.  Then refrigerate it to harden.

6. After the dough has rested, roll out the dough into a large rectangle and place the butter rectangle in the center of the dough.  Fold the ends of the dough over the butter, so that the butter is completely enveloped in the dough.

7. Roll the dough into a long, thin rectangle and then fold it into thirds, as if you were folding a letter.  Refrigerate the dough for 30 minutes.

8. Repeat the process of stretching, rolling and folding the dough three more times, chilling it between each time.

9. After the last turn, refrigerate the dough for at least 1 hour or overnight.

10. Preheat your oven to 220°C.

11. Roll out the dough into a rectangle and cut out triangles.  Then, roll each triangle from the base towards the tip to form croissants.

12. Place the croissants on a baking sheet lined with parchment paper.

13. Beat the egg with a pinch of salt and paint the croissants with this mixture to give them a golden shine.

14. Bake the croissants in the preheated oven for 15-20 minutes, or until golden and crisp.

15. Enjoy your freshly baked homemade croissants!
