Coffee brownies
Everyone will love coffee brownies. Something special? The chocolatey brownie is covered with a wonderful coffee frosting. Juicy, creamy and so delicious!
INGREDIENTS (For 21 pieces)
FOR THE DOUGH
400 g dark chocolate couverture
240g butter
300g brown sugar
6 eggs (size M)
6 tsp instant coffee powder
4 tsp hot water
180 g wheat flour (Type 405)
40 g baking cocoa
FOR FROSTING
150 g white chocolate coating
80g cream
2 tsp instant coffee powder
75g butter
150g powdered sugar
Coffee beans for sprinkling if desired
PREPARATION
1st step
Line a rectangular springform pan (20 x 30 cm) with baking paper. Preheat the oven to 180 degrees top/bottom heat (fan oven: 160 degrees). Finely chop the dark chocolate and melt it with the butter over a hot water bath.
2nd step
Put the brown sugar with the eggs in a mixing bowl and beat until creamy. Dissolve the coffee powder in 4 teaspoons of hot water and add it to the eggs along with the liquid butter-chocolate mixture and beat everything until creamy.
3rd step
Mix the flour with the baking cocoa in a bowl, sift into the dough and stir briefly. Pour the dough into the prepared pan, smooth it out and bake in the preheated oven for about 30 minutes. Then let the brownie cool completely.
4th step
For the frosting, finely chop the white couverture and put it in a bowl. Bring cream to a boil in a small saucepan.
Dissolve the coffee powder in it, then pour the hot cream a little at a time over the white chocolate coating and melt it in this way and stir the two together. Cover the ganache with foil and let it rest for about 1 hour.
