Start by making a compound butter. Into a food processor add 8 tbsp butter, 1 tbsp of diced preserved lemon skin, 2 tsp garlic paste, 1 tbsp freeze dry parsley, 1 tsp salt, 1 tsp black pepper.

Step 2

Blend everything together, then place it into some plastic wrap and roll tight. Place it into the refrigerator to solidify.

Step 3

Now to make a Gremolata, into a bowl add 2 tbsp of diced preserved lemon skin, 2 minced garlic’s, 2 tbsp freshly chopped parsley, 1 tsp black pepper, 4 tbsp olive oil and salt and pepper to taste.

Step 4

Season all of your steaks with salt, freshly ground pepper and garlic powder. Make sure to get both sides including the edges. Cook them on the grill starting by searing them then finishing them in indirect heat until they reach an internal temperature of 135°F.

Step 5

while cooking get a lemon, cut it in half and place it on the grill to use to baste one of the steaks. For the other steaks 1 of them you’re going to melt some of the compound lemon butter over top and the other you’ll put some of the gremolada over top.

Now all that’s left is to slice them up and determine which of the 3 steaks you like the most. Enjoy!
