You can easily make the juicy Easter wreath made from yeast dough yourself using our recipe! Braided and decorated with colorful eggs, your wreath is an absolute eye-catcher!
INGREDIENTS
FOR THE Yeast DOUGH
500 g flour (Type 405)
80g sugar
1 teaspoon grated lemon peel
250 ml milk
1 cube of fresh yeast
2 eggs (size M)
75g soft butter
1 pinch of salt
ASIDE FROM THAT
some flour for dough processing
5 whole, raw eggs (size M)
1 egg for brushing
1 tbsp milk for brushing
some granulated sugar for sprinkling
5 colorful, boiled Easter eggs
PREPARATION
1. For the yeast dough, sift the flour into a bowl. Add the sugar and lemon zest. Mix everything briefly and make a well in the middle. Warm the milk in a small saucepan.
2. Dissolve the fresh yeast in the milk. Pour the warm yeast milk into the cavity and use a fork to mix the milk and flour into a pre-dough. Cover the dough and let it rise for 15 minutes.
3. Add the eggs, butter and salt and mix well. Knead the dough for 5 more minutes until a compact, stable dough is formed. Cover and let rise in a warm place for 60 minutes.
4. Knead the yeast dough again on a floured work surface and divide into 3 equal parts. Form each third of the yeast dough into long logs and intertwine them together. Knead the ends together to form a wreath.
5. Preheat the oven to 180 degrees top and bottom heat (fan oven 160 degrees). Spread 5 raw eggs on the wreath and press them in lightly, cover the wreath again and let rise for another 30 minutes.
6. Whisk the egg with the milk and brush the wreath with it.
Sprinkle on some granulated sugar and possibly place a narrow, ovenproof glass in the middle of the wreath (so that the hole remains during baking).
Bake the wreath for 35-40 minutes. After baking, replace the eggs with colorful Easter eggs.
