Juicy salmon

Juicy salmon

Juicy salmon is a culinary delight that tantalizes the taste buds with its succulent texture and rich flavor. Whether grilled, baked, or pan-seared, properly cooked salmon boasts a tender, moist interior that practically melts in your mouth.

RECIPE INGREDIENTS (3 portions)

* 3 salmon fillets (150 g each)
* 180 g pumpkin / sweet potato, diced into 1 cm cubes
* 400 g leaf spinach
* 2 shallots, very finely diced
* 1 garlic clove, thinly sliced
* 50 g pine nuts
* 1 organic lemon, sliced
* 200 ml cream
* 50 ml mascarpone
* Salt, pepper, nutmeg
* 1 pinch of piri-piri, if needed
* Olive oil for frying

RECIPE PREPARATION

* Preheat the oven to 180°C top/bottom heat.

* Roast the pine nuts in a small pan without fat and over medium heat, remove and set aside.

* Place a large pan with a suitable lid over medium heat and sauté the shallot cubes in 2-3 tablespoons of olive oil, adding a little salt. Add the pumpkin cubes and garlic slices and sauté for 2 minutes.

* Put the spinach in the pan and put the lid on the pan. Let the spinach collapse and mix with the ingredients in the pan. Season everything with salt, pepper and a good pinch of nutmeg.

* Add the cream and mascarpone and mix. Bring the liquid to the boil and pour into a casserole dish. Spread the lemon slices on top.

* Season the salmon fillets with salt, pepper (and a pinch of piri-piri if necessary) and place in the casserole dish on top of the lemons. Cook in the preheated oven for 20 minutes and serve immediately.
