Rhubarb compote without sugar

Rhubarb compote without sugar is a delicious way to showcase the spring-like stalks. With our recipe you can cook fresh rhubarb without sugar. A wonderfully juicy treat!

INGREDIENTS (For 2 servings)

350 g rhubarb
125 g strawberries
1 organic orange
2 tsp maple syrup

PREPARATION

1st step
Wash the rhubarb, pat dry and cut off the leaves and ends. Cut the rhubarb stalks into pieces about 1 cm in size. Wash the strawberries, dry them, remove the green stalk and cut into pieces.

2nd step
Put the rhubarb pieces in a small pot. Wash the orange in hot water and grate 1 tsp of the peel.  Squeeze the orange and mix 4 tablespoons of juice, orange zest and maple syrup into the rhubarb, let everything simmer gently for about 10 minutes. Add the strawberries and let simmer for another 5 minutes on the lowest setting, then let cool. The rhubarb compote without sugar will keep for at least 5 days in the fridge.
