Funfetti cake
Our funfetti cake is the perfect birthday cake! With this recipe made from simple batter and buttercream, you are guaranteed to make a confetti cake.
INGREDIENTS
FOR THE BATTERIES
400 g wheat flour (type 405)
1 packet of baking powder
1 pinch of salt
250 g soft butter (room temperature)
180 g sugar
3 eggs (size M)
200 g sour cream
2 tsp vanilla extract
5 tbsp milk
100 g colored sugar sprinkles
Some butter for the molds
FOR BUTTER CREAM & DECORATION
500 ml milk
1 tsp vanilla extract
2 packets of vanilla pudding powder (37 g powder each)
100 g sugar
1 egg yolk (size M)
500 g soft butter (room temperature)
200 g colored sugar sprinkles
PREPARATION
Step 1
For the batters, mix the flour with the baking powder and salt in a bowl. Beat the soft butter and sugar in a bowl for several minutes until creamy, gradually add the eggs and stir in.
Add the sour cream and vanilla extract and stir in. Add the flour mixture and the milk and stir everything into a smooth dough. Fold the sugar sprinkles into the dough quickly and briefly.
Step 2
Preheat the oven to 180 degrees top/bottom heat (fan oven: 160 degrees). Grease two springform pans (Ø 20 cm) and line them with baking paper if necessary.
Divide the dough between the two pans (you can also bake the bases one after the other) and bake in the preheated oven for approx. 35-40 minutes until golden brown.
Step 3
Use the toothpick test to check when the bases are baked through. Allow the cake bases to cool completely, then cut each base in half horizontally to make a total of 4 bases.
