Asparagus casserole
Mmmmhhh, our asparagus casserole with potatoes and ham is really easy to prepare and sooo delicious! You can prepare the casserole in just 20 minutes – the oven does the rest.
INGREDIENTS
600 g white asparagus
1 large potato
A little salt
1 pinch of sugar
4 slices of cooked ham
2 egg yolks
250 g cream
1 pinch of nutmeg
½ tsp salt
1 pinch of white pepper
1 tbsp butter
100 g grated cheese
A little flat-leaf parsley
PREPARATION
1. Wash the asparagus, peel it and cut 1 cm off the bottom. Peel the potato and cut it into 1 x 1 cm cubes. Boil both together in salted water with a pinch of sugar for about 5 minutes and leave to steep for 5 minutes. Drain the water.
2. Cut the ham into thin strips and then again crosswise into small squares. Mix the egg yolks with the cream, nutmeg, salt and pepper in a bowl.
3. Grease a casserole dish with the butter and place the asparagus spears in it. Place the potato pieces and the ham squares on top and pour the cream and egg mixture over everything. Sprinkle with the grated cheese and bake at 175 degrees top and bottom heat for about 30 minutes until golden brown.
4. Wash the parsley, pat dry, remove from the stalk and roughly chop the leaves. Sprinkle on top after baking. Enjoy!
