Lemon Cookies

Lemon Cookies

Lemon cookies are a delicious dessert that combines the sweetness of cookies with the refreshing touch of lemon.  They usually have a citrus flavor and a very pleasant aroma.  They are ideal to accompany a cup of tea or as a light snack at any time of the day.

Ingredients:

• 1 cup butter (at room temperature)

• 1 cup of sugar

• 2 eggs

• 2 teaspoons lemon zest

• 2 tablespoons of lemon juice

• 3 cups of wheat flour

• 1/2 teaspoon baking soda

• 1/2 teaspoon salt

Before making lemon cookies, make sure you have all the ingredients and preheat the oven to the right temperature.  Good luck with your recipe!

Preparation:

1. In a large bowl, beat the butter and sugar until smooth and creamy.

2. Add the eggs, one at a time, beating well after each addition.

3. Add the lemon zest and juice and mix until well combined.

4. In another bowl, sift together the flour, baking soda and salt.

5. Gradually add the flour mixture to the butter mixture and mix until the dough is smooth.

6. Divide the dough into two parts and form two long rolls.  Wrap them in plastic wrap and refrigerate them for at least 1 hour, or until firm.

7. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.

8. Cut the dough rolls into slices about 1/4 inch thick and place them on the baking sheet.

9. Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are golden brown.

10. Let the cookies cool on the tray for a few minutes before transferring them to a wire rack to cool completely.
