Mole cake from the tray

The classic with a twist: Our recipe for mole cake on the tray is quick to make.  We love the delicious filling made from banana, cream and chocolate shavings – so creamy!

INGREDIENTS

FOR THE DOUGH

225 ml sunflower oil
2 eggs (size M)
240g sugar
1 pack vanilla sugar
380 g wheat flour (Type 405)
1 pinch of salt
1 pack of baking powder
4 tbsp baking cocoa
250 ml milk
Some butter for the mold

FOR THE FILLING

600 g cream
3 packs of cream stiffener
2 packs of vanilla sugar
100 g dark chocolate shavings
8 bananas (approx. 1.2 kg)

PREPARATION

1st step
Preheat the oven to 180 degrees top/bottom heat (fan oven: 160 degrees).  Grease a baking tray (39 x 26 x 4 cm).  For the dough, whisk together the oil, eggs, sugar and vanilla sugar.  Mix the flour with salt, baking powder and cocoa and stir into the egg mixture alternately with the milk.

2nd step
Pour the dough into the prepared tray, smooth it out and bake in the preheated oven for about 20-25 minutes.  Allow the cake to cool completely.

3rd step
Hollow out the cake with a spoon to a depth of approx. 1 cm.  Crumble the dough in a bowl and set aside.  There should be enough crumbs to cover the cake later.

4th step
For the filling, whip the cream until stiff, while adding the cream stiffener and vanilla sugar.  Fold the chocolate shavings into the cream.  Peel the bananas, cut them in half lengthways and place them close together on the cake base.

5th step
Spread the cream on the cake and smooth it out.  Cover the cream with the scooped out cake crumbs.  Refrigerate the mole cake until serving.  The cake makes about 20 pieces.

Our tip: mole cake with strawberries
For a mole cake without banana, you can simply clean and halve about 900 g of strawberries and top the chocolate cake with them.
