Fluffiest  Wind Fritters

Buñuelos de viento are fried sweets of Spanish origin, made with a light and spongy dough based on flour, egg and yeast.  Their name comes from the airy texture they acquire when cooked.  They are traditionally sprinkled with sugar and often enjoyed during celebrations and festivities.

Ingredients

For the mass:

• 250 ml of water

• 125 g of butter

• 150 g of wheat flour

• 4 eggs

• A pinch of salt

• A pinch of sugar

To fry:

• Vegetable oil (for frying)

To decorate:

• Powdered sugar (optional)

• Cinnamon powder (optional)

Prepare your ingredients ahead of time and enjoy these traditional fried sweets!

Preparation

• In a saucepan, heat the water, butter, pinch of salt and pinch of sugar over medium heat.  Bring the mixture to a boil.

• When the mixture boils, remove the saucepan from the heat and add the wheat flour all at once.  Stir quickly with a wooden spoon until the mixture forms a homogeneous mass and comes away from the sides of the saucepan.

• Let the dough cool slightly, then add the eggs one at a time, beating vigorously after each addition until the dough is smooth and homogeneous again.

• Fill a pastry bag with the dough or use two spoons to form small portions of dough into balls or rosettes on a floured tray.

• Heat enough vegetable oil in a deep frying pan or deep fryer to 180°C (350°F).

• Fry the wind fritters in the hot oil until golden and crispy, approximately 3-4 minutes per side.  It is important not to put too many fritters in the pan at the same time so that they do not clump and cook evenly.

• Remove the fritters from the oil with a slotted spoon and place them on absorbent paper to remove excess oil.

• Optionally, you can sprinkle the fritters with icing sugar or cinnamon powder before serving.

• Serve the wind fritters hot and enjoy them.
