Lemon buttercream
Lemon buttercream is so easy. The cream with lemon zest, vanilla pudding powder and butter is very quick to make and tastes creamy and fresh. Perfect for all your cupcakes or cakes!
INGREDIENTS
125 g sugar
3 lemons
125 ml water
1 pack vanilla sugar
250 g soft butter
PREPARATION
Step 1
Wash the lemons with hot water and dry. Zest 2 lemons, squeeze all 3 lemons. Put the lemon zest, juice, sugar and water in a small saucepan.
Step 2
Mix the vanilla pudding powder with 3 tablespoons of the liquid in a small bowl until smooth. Bring the remaining liquid to the boil in the saucepan and stir in the mixed pudding powder. Cook the lemon pudding for 2 minutes, stirring.
Step 3
Pour the pudding into a bowl and leave to cool completely, stirring occasionally to prevent a skin from forming.
Step 4
Divide the butter into small pieces. Beat the lemon pudding vigorously once, then mix in the butter piece by piece. Beat the buttercream with lemon until creamy. The lemon buttercream is enough for 12 cupcakes.

Cleverly prepared
You can prepare the lemon buttercream with pudding up to 5 days in advance and store it in the fridge in the meantime. Allow it to reach room temperature before further processing and beat again briefly.
