Ingredients:
• 4 ripe passion fruits
• 1 can (400 ml) of condensed milk
• 1 cup of heavy cream (whipping cream)
• 1 teaspoon vanilla extract (optional)
• 1/4 cup of sugar (adjustable according to your preference)
Before making passion fruit ice cream, make sure you have fresh passion fruits ready to use, and keep in mind that you will need sugar and an ice cream maker or freezer to get the right texture.
Preparation:
1. Cut the passion fruits in half and scoop out the pulp with a spoon. Place the pulp in a strainer to separate the seeds and obtain the passion fruit juice. You can use a spoon to press and extract as much juice as possible.
2. In a large bowl, mix the passion fruit juice with the condensed milk. Taste the mixture and, if you prefer it sweeter, add sugar to taste.
3. In another bowl, beat the heavy cream (whipping cream) until thick and has soft peaks. You can do it with an electric mixer or by hand with a whisk.
4. If desired, add vanilla extract to whipped cream and mix well.
5. Gently fold the whipped cream into the passion fruit juice and condensed milk mixture. Do it with soft and enveloping movements so that the mixture is well integrated.
6. Pour the mixture into a freezer-safe container and cover it with plastic wrap or an airtight lid.
7. Place the container in the freezer and leave it there for at least 4 hours, or until the ice cream is firm.
8. Serve the passion fruit ice cream in cups or cones and enjoy. You can decorate it with passion fruit pulp or lemon zest if you wish.
