Quark casserole with apples

Our quark casserole with apples and semolina is very easy to prepare: The light and airy quark mixture with juicy apple slices makes a great dessert or sweet main course.

INGREDIENTS

FOR THE QUARK MASS

3 eggs (size M)
120 g sugar
1 packet of vanilla sugar
500 g low-fat quark
60 g soft wheat semolina
1 packet of vanilla pudding powder
2 tsp baking powder

ALSO

1 tsp butter for the dish
3 apples (3 pieces = approx. 500 g; e.g. Boskoop)
2 tsp icing sugar for sprinkling

PREPARATION

1. Prepare a casserole dish (28x18x4 cm) and grease with butter.  Preheat the oven to 180 degrees top and bottom heat (fan oven 160 degrees).

2. Separate the eggs for the quark mixture. Beat the egg yolks with two thirds of the sugar until creamy, then stir in the vanilla sugar and low-fat quark. In a separate bowl, beat the egg whites and the remaining sugar (with a clean, fat-free whisk) until stiff.

3. Mix the soft wheat semolina, vanilla pudding powder and baking powder together, add to the quark mixture and stir briefly. Fold in the egg whites loosely with a dough scraper, then pour the mixture into the mold.

4. Wash, peel, core and cut the apples into wedges. Spread the apple wedges on the quark mixture, pressing down lightly. Bake the quark casserole in the preheated oven for around 25 minutes, then sprinkle with icing sugar and serve immediately while still lukewarm. Enjoy!
