Walnut cake from the tray
Walnut cake from the tray is so moist and delicious. This quick recipe with delicious chocolate icing is guaranteed to be a hit at any cake table.
INGREDIENTS
FOR THE DOUGH
300 g walnuts
5 eggs (size M)
250 g soft butter
250 g sugar
2 pinches of salt
220 g wheat flour (type 405)
3 tsp baking powder
FOR THE Icing
200 g dark chocolate
3 tbsp neutral cooking oil (e.g. sunflower oil)
50 g walnut halves
ALSO
Some butter for the tray
PREPARATION
Step 1
Preheat the oven to 180 degrees top/bottom heat (fan oven: 160 degrees). Grease a baking tray (approx. 38 x 45 cm) and line it with a piece of baking paper if desired. Grind the walnuts in a food processor. Separate 3 eggs. Put the egg whites to one side.
Step 2
Beat the butter, 150 g sugar and salt with the whisk of the hand mixer for approx. 2 minutes on the highest setting until foamy and white. Add 3 egg yolks and continue to beat. Also add 2 whole eggs and continue to beat.
Step 3
Mix the flour and baking powder and stir into the dough alternately with the ground nuts. Beat 3 egg whites with the remaining 100 g sugar until stiff and fold into the dough. Place the walnut dough on the prepared tray, smooth it out evenly and bake in the preheated oven for approx. 30 minutes. Allow the walnut cake to cool on the tray.
Step 4
For the icing, roughly chop the chocolate coating and melt it in a bowl over a hot water bath. Stir in oil. Pour the chocolate coating onto the surface of the cake and spread it with a cake lifter or a brush.

Decorate the cake with walnut halves, let it set and serve. The quick walnut cake from the tray makes about 20 pieces and will keep for at least 3 days if stored airtight at room temperature.

If you have any leftover nuts or almonds at home, you can replace some of the walnuts with them.
