Mexican tres leches cake

Ingredients

Cake

• Eggs.

• Vanilla.

• Sweetener (sugar, stevia, sucrose…).

• Flour.

Decor

• Condensed milk.

• Evaporated milk.

• Whole milk.

• Whipping cream.

• Sugar glass.

• Strawberries.

Steps

Step 1

Preheat the oven to 180º Celsius.

Step 2

Prepare a springform pan with butter or non-stick baking spray.

Step 3

Mix the ingredients.  In a bowl, place 5 eggs, 1 teaspoon of vanilla and mix with a mixer until the mixture has doubled in size and is light yellow.  When this happens, add the sweetener of your choice little by little while continuing to beat and progressively add 3 tablespoons of flour (around 150g) to finish mixing with a paddle.

Step 4

Pour the mixture into the previously prepared springform pan and bake for about 25 minutes, remove from the oven, let the mixture cool and remove the cake from the pan.

Step 5

In a separate bowl, combine 1 can of evaporated milk, 1 glass of whole milk and 1 whole can of condensed milk, mix and heat to boiling point.  When this happens, remove the mixture, let cool and add to the cake.

Step 6

Refrigerate the paste for 2 hours.

Step 7

To decorate the cake, use the whipping cream and powdered sugar.  Mix these two ingredients with a mixer until the cream is thick (it is firm).  Later decorate the cake with cream and chopped strawberries.
