INGREDIENTS
FOR THE CAKE
100 g dark chocolate
3 bananas (400 g unpeeled)
3 eggs (size M)
200 g brown sugar
1 pinch of salt
250 g wheat flour (type 405)
30 g baking cocoa
1 tsp baking soda
150 ml neutral cooking oil (e.g. sunflower oil)
150 ml buttermilk
1 tsp baking powder
FOR THE DECORATION
100 g dark chocolate
30 g butter
Sliced banana as desired
PREPARATION
Step 1
Preheat the oven to 180 degrees top/bottom heat (fan oven: 160 degrees). Rinse the silicone loaf pan (27 x 13 x 6.2 cm) with cold water, do not dry. Chop the dark chocolate, melt it over a hot water bath and set aside.
Step 2
Peel the bananas and cut them into cubes (not too small). Beat the eggs and sugar. Add the salt and fold in the chocolate.
Step 3
Mix the flour, cocoa, baking soda and baking powder and fold into the egg mixture alternately with the oil and milk. Stir in the banana cubes. Pour the dough into the loaf pan and smooth it out.
Step 4
Bake in the preheated oven for about 50 minutes. Don’t forget to do the toothpick test. Take it out of the oven and turn it out of the pan after about 10 minutes. Allow it to cool completely on a cake rack.
Step 5
For the icing, chop the dark chocolate and melt it over a hot water bath. Stir in the butter, allow it to cool a little and then pour it over the cooled cake. Decorate with banana slices and serve. The cake makes about 10 pieces.
