Raspberry tiramisu in a glass

Raspberry tiramisu in a glass is the perfect dessert when you’re in a hurry. With mascarpone, ladyfingers and raspberries, the dessert is unbeatable. You’ll make this recipe again and again.

INGREDIENTS (For 4 glasses)

300 g fresh or frozen raspberries
2 tbsp raspberry liqueur (optional)
2 packs of vanilla sugar
250 g mascarpone
250 g Greek yogurt (10% fat content)
100 g cream
3 tbsp sugar
80 g sugar
80 g ladyfingers

ALSO

125 g fresh raspberries to garnish
Fresh mint to garnish

PREPARATION

Step 1
Put the raspberries in a tall mixing bowl (let them thaw if necessary) and puree with the raspberry liqueur and vanilla sugar.  Pass the raspberry mixture through a coarse sieve to remove the seeds.

Step 2
Stir the mascarpone and yoghurt until smooth. Whip the cream until stiff, adding the sugar as you go. Fold the cream into the mascarpone mixture and fill the cream into a piping bag or freezer bag.

Step 3
Cut the ladyfingers into pieces to fit the four glasses (300 ml each). Put 2-3 ladyfingers in each glass. Divide half of the raspberry puree between the four glasses, then spread half of the cream on top. Repeat the process until all the components have been used up, then refrigerate the desserts for at least 60 minutes to infuse.

Step 4
Garnish the tiramisu in a glass with raspberries with fresh raspberries and fresh mint before serving.
