The meringue snowdrops are delicious sweet bites, with a crunchy texture on the outside and soft on the inside. Ingredients
For the mass:
• 250g wheat flour
• 125g lard
• 75g powdered sugar
• 1 egg
• 1 teaspoon cinnamon powder
For the meringue:
• 2 egg whites
• 150g powdered sugar
Make sure utensils are clean and dry to achieve a perfect meringue. Also, add the sugar little by little to obtain a smooth and shiny texture.
Preparation
1. Preheat the oven to 180°C (350°F).
2. In a large bowl, mix the flour, powdered sugar and cinnamon.
3. Add the lard and mix with your hands until you obtain a homogeneous mass.
4. Add the egg and continue kneading until everything is well integrated.
5. Roll out the dough on a floured surface until it is about 1 centimeter thick.
6. Using a cookie cutter or glass, cut the dough into round shapes or whatever shape you prefer.
7. Place the cookies on a baking tray lined with baking paper and bake for about 12-15 minutes, or until lightly golden.
8. While the cookies cool, prepare the meringue. In a clean, dry bowl, beat the egg whites until stiff.
9. Add the powdered sugar little by little, continuing to beat, until the meringue is shiny and firm.
10. Cover each cookie with a layer of meringue.
11. Place the cookies back on the baking sheet and bake for a few more minutes, just long enough for the meringue to brown slightly.
12. Remove from the oven and let cool completely before serving.
