Asparagus pancakes

Asparagus pancakes

Whether for breakfast, brunch, lunch or dinner – these fine pancakes with asparagus pieces and mountain cheese always taste wonderful!

INGREDIENTS (For 14 pieces)

400 g asparagus (green or white)
3 eggs
1 tsp sugar
1 tsp salt
250 g flour
2 tsp baking powder
200 ml milk
3 tbsp cooking oil
½ bunch chives
50 g mountain cheese

PREPARATION

1st step
Wash the asparagus, cut off the ends and peel. Cut into large pieces and cook in a pan of boiling salted water for approx. 10 minutes. Drain and set aside.

2nd step
Beat the eggs with sugar and salt until frothy. Mix the flour with the baking powder and add. Add the milk and oil and stir into the dough.

3rd step
Cut the chives into fine rings.  Cut the asparagus into small pieces of approx. 1 cm. Cut the mountain cheese into fine cubes. Add the herbs, cheese and asparagus pieces to the dough and mix.

4th step
Heat some of the remaining oil in a pan. Put approx. 3 tablespoons of dough for one pancake into the pan. Spread it out a little with a spoon to create a small pancake of approx. 10 cm in diameter. Bake until golden brown on both sides. Stack the pancakes as desired. Serve with herb quark and sliced ​​radishes.
