Onion jam
Red onion jam – with our recipe you can easily make it yourself! The jam with a sweet and spicy note is ideal as a spread on bread, with cheese and meat or as a gift.
INGREDIENTS
350 g red onions
1 clove of garlic
a few sprigs of rosemary and thyme
2 tbsp olive oil
2 tbsp raw cane sugar
80 ml port wine
40 ml balsamic vinegar
120 ml water
1 bay leaf
1 star anise
1 tsp cornstarch
salt
freshly ground pepper
1 tbsp honey
PREPARATION
1. Rinse 2 screw-top jars with lids (approx. 180 ml each) with boiling hot water and allow to drain.
2. Peel the onions and garlic, dice the onions finely and press the garlic clove with the back of the knife. Wash the herbs and allow to drain.
3. Heat olive oil in a pan, add onion and garlic and sauté over medium heat for about 5 minutes. Add raw cane sugar and caramelize lightly while stirring. Deglaze with port wine, balsamic vinegar and water, add herbs and spices and simmer with the lid closed for about 20 minutes. Stir occasionally.
4. Remove garlic, herbs and spices with a fork. Stir cornstarch with the remaining cold water until smooth and thicken the jam according to the instructions on the packet.
5. Season onion jam with salt, pepper and honey, bring to the boil again, pour hot into the boiled jars, close and leave to cool with the lid down. The onion jam will keep for about 6 months if stored in a cool, dark place. Enjoy!
