Mini pineapple dumplings

Mini pineapple dumplings

Mini pineapple dumplings are delicious tropical bites that combine the sweetness of pineapple with the crunchy texture of the dough.  Their compact size makes them ideal to serve as appetizers or desserts on any occasion, adding a refreshing touch to the dining experience.  They are an explosion of flavor in every bite!

Ingredients:

• 1 can of pineapple slices in syrup

• 1/4 cup (55g) melted butter

• 1/2 cup (100g) brown sugar

• 6-8 maraschino cherries

• 1 cup (120g) wheat flour

• 1/2 cup (100g) granulated sugar

• 1 egg

• 1/3 cup (80ml) of milk

• 1 Teaspoon vanilla extract

• 1 teaspoon baking powder

• A pinch of salt

Before preparing the mini pineapple flips, be sure to grease the molds well to prevent them from sticking and to balance the sweetness of the pineapple with a touch of acidity, such as lemon juice, to highlight the flavors.  Enjoy your preparation!

Preparation:

1. Preheat the oven to 180°C (350°F).  Grease the inside of muffin cups or individual pineapple flip pans.

2. Drain the pineapple slices, reserving the syrup.  Cut the slices into smaller pieces that fit the bottom of the molds.

3. Place a maraschino cherry in the center of each mold, on top of the pineapple pieces.

4. In a bowl, mix the melted butter and brown sugar.  Divide this mixture between the molds, covering the bottom.

5. Place a piece of pineapple on top of the sugar and butter mixture in each mold.

6. In another bowl, mix the flour, granulated sugar, baking powder and salt.

7. Add the egg, milk, vanilla essence and 2 tablespoons of the reserved pineapple syrup to the dry mixture.  Mix until smooth and homogeneous.

8. Pour the batter over the pineapple slices in the molds, filling each mold 2/3 full.

9. Bake in the preheated oven for about 20-25 minutes or until a toothpick inserted into the center comes out clean.

10. Remove from the oven and let cool for a few minutes.  Next, run a knife around the edges of each mold and invert the mini pineapple dumplings onto a serving tray.

And that’s it!  Serve your mini pineapple volts hot or at room temperature.  Enjoy them!
