Strawberry tiramisu
Tiramisu is an incredibly popular classic among desserts. Why not make a creamy strawberry tiramisu? With a mixture of mascarpone and quark, this recipe is super easy and so delicious.
INGREDIENTS (for 8 servings)
500 g strawberries
70 g sugar
3 tbsp lemon juice
3 egg yolks (size M)
1 pinch of salt
500 g mascarpone
250 g quark (20% fat)
200 g cream
200 g ladyfingers
some baking cocoa to sprinkle on top
some strawberries to garnish
PREPARATION
Step 1
Wash and clean the strawberries and pat dry. Puree half of the strawberries with 20g sugar and lemon juice. Cut the remaining strawberries into small cubes. Beat the egg yolks with the remaining sugar and salt for at least 2 minutes until frothy. Briefly stir the mascarpone and quark with a whisk until smooth. Carefully fold in the egg yolk mixture. Beat the cream until stiff and finally stir into the cream.
Step 2
Cover the bottom of the casserole dish (20 x 25 cm) with ladyfingers. Spread half of the strawberry puree on top. Add half of the mascarpone cream. Sprinkle with half of the strawberry cubes and smooth out. Spread the remaining ladyfingers on top and press down lightly. Add the remaining strawberry puree and the remaining strawberry cubes on top. Add the remaining cream and smooth out.
Step 3
Draw waves in the cream as desired using a baker’s comb or a fork. Refrigerate for about 1 hour. Just before serving, dust generously with cocoa powder and garnish with strawberries as desired.
