Redcurrant muffins
Summertime is berry time, so our muffin recipe comes just in time! The redcurrants give the fluffy muffins the perfect acidity.
INGREDIENTS (For 12 muffins)
FOR THE MUFFINS
250 g redcurrants
250 g flour
2 tsp baking powder
150 g sugar
1 pack vanilla sugar
1 pinch of salt
50 – 70 g soft butter
200 g sour cream
2 eggs
200 g whipped cream
Redcurrant stalks for garnishing
PREPARATION
Step 1
Wash the redcurrants, remove the berries from the stem using a fork. Line a muffin tray (12 cavities) with paper cases. Preheat the oven to 180 degrees (fan oven: 160 degrees).
2nd step
Mix the flour with the baking powder, sugar, vanilla sugar and salt in a bowl. Add the butter, sour cream and eggs and beat everything with the whisk of the hand mixer for 2 minutes until fluffy. Stir in the currants.
3rd step
Fill the dough into the molds and bake for approx. 25 minutes. Allow to cool. Shortly before serving, whip the cream and garnish each muffin with currant stalks and whipped cream as desired.
