Frau Holle cake

Frau Holle cake is the best and cheapest sheet cake! The recipe with batter, strawberry icing and whipped cream makes the simple cake a hit for the whole family.

INGREDIENTS

FOR THE DOUGH

400 g wheat flour (type 405)
250 g sugar
3 tsp baking powder
240 ml mineral water
120 ml neutral cooking oil (e.g. sunflower oil)
4 eggs (size M)

FOR THE GLAZE

600 g fresh strawberries
1 tbsp lemon juice
2 packs of red cake glaze
1 tbsp sugar

FOR THE CREAM

600 g cream
3 packs of cream stiffener
100 g white chocolate

PREPARATION

1st step
Preheat the oven to 180 degrees top/bottom heat (fan oven: 160 degrees). Line a baking tray (approx. 38 cm x 45 cm) with baking paper. For the dough, mix the flour, sugar and baking powder in a bowl. Add mineral water, oil and eggs and stir all ingredients into a smooth dough.

Step 2
Put the dough on the prepared baking sheet, smooth it out and bake in the preheated oven for about 20 minutes, then let it cool down. For the icing, wash the strawberries, pat them dry and remove the green parts. Put them in a tall measuring cup and puree them with lemon juice until smooth.

It’s not strawberry season?
You can also use frozen fruit instead of fresh strawberries. Defrost the strawberries in a small saucepan over medium heat and puree them. Allow the puree to cool, then bring to the boil with the cake icing as described in step 3.

Step 3
Mix the cake icing powder with the sugar. Put the strawberry puree and cake icing-sugar mixture in a saucepan and stir with a whisk until there are no lumps, then bring to the boil briefly while stirring. Pour the warm strawberry filling onto the cooled base and allow to cool completely, about 1 hour.
