Banana oatmeal cookies

Banana oatmeal cookies are so easy and so delicious.  The recipe for thick cookies is made from just three ingredients: bananas, oatmeal and a little salt.

INGREDIENTS (For 12 pieces)

2 bananas (approx. 300 g)
120 g fine oatmeal
1 pinch of salt (optional)

PREPARATION

Step 1
Preheat the oven to 180 degrees top/bottom heat (fan oven: 160 degrees). Line a baking tray with baking paper. Peel the bananas, put them in a bowl and mash them as finely as possible with a fork. Add the oatmeal and salt and mix everything together well. Stir in chocolate drops or chopped nuts as desired. Leave to soak for at least 5 minutes.

Step 2
Shape the oat mix into rounds with your hands or two spoons and place them on the baking sheet with some space between them. If the dough is too soft, let it swell a little longer or stir in 1 tablespoon of cornstarch. Bake the banana oat cookies in the preheated oven for about 15-20 minutes until they brown slightly around the edges. If packed airtight at room temperature, the oatmeal cookies with banana will keep for at least 3 days.
