Marmalade cookies
Ingredients
– 125 gr margarine or butter (room temperature)
– 1.5 cups flour
– 1 package vanilla
– 1/2 teaspoon baking powder
– 1/2 cup powdered sugar
For the topping
– Marmalade (your favorite variety)
Preparation
1. Place baking paper on a baking tray and set aside.
2. Mix the flour and baking powder in a bowl.
3. In a separate bowl, beat the softened butter, powdered sugar and vanilla until it reaches a creamy consistency.
4. Add the flour mixture to this bowl and knead.
5. Break off walnut-sized pieces from the dough and roll them.
6. If you wish, roll in hazelnuts or walnuts, or shape as in the video. (I used a fish tweezer to shape it.) Make a hole in the center of the cookie dough with your thumb.
7. Place a teaspoon of jam in the center of each cookie and refrigerate for 30 minutes.
8. Bake in the preheated oven for about 15-20 minutes. Be careful not to overcook the cookies, so they don’t brown too much.
9. Remove from the oven and let them cool on the baking sheet for about 10 minutes, then carefully transfer the cookies to a wire rack and cool completely.
These jam cookies are really delicious. You can fill them with any other jam you like or even Nutella
