Quick Pineapple Bread
Ingredients:
2 cups flour
1 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs
1/2 cup vegetable oil
1 can (425g) crushed pineapple, drained (reserve 1/4 cup of the juice)
1/2 cup chopped walnuts (optional)
Preparation:
Preheat the oven to 180°C. Grease a 23×13 cm loaf pan.
In a large bowl, mix the flour, sugar, baking powder, baking soda and salt.
In another bowl, beat the eggs with the oil and the reserved pineapple juice.
Add the wet ingredients to the dry ingredients, mixing until combined.
Add the crushed pineapple and walnuts, if using. Mix gently.
Pour the batter into the prepared pan.
Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
Cool in the pan for 10 minutes, then remove from the pan and cool completely on a wire rack.
Serve in slices.
