Ingredients (Makes 1 cheesecake)

✅ 1 ¾ cups graham cracker crumbs
✅ 7 tbsp unsalted butter, melted
✅ 24 oz cream cheese, softened
✅ 1 cup packed light brown sugar
✅ 3 tbsp all-purpose flour
✅ 1 (3.4 oz) package dry butterscotch pudding mix
✅ 4 large eggs
✅ 1 tsp vanilla extract
✅ ¾ cup double cream
✅ ½ cup sour cream
✅ 2 cups butterscotch chips (plus extra for garnish)

Instructions

Step 1: Prepare the Crust
1️⃣ Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.

2️⃣ Mix & press: In a bowl, combine graham cracker crumbs and melted butter. Press firmly into the bottom of the pan.

3️⃣ Bake for 10 minutes, then set aside to cool slightly.

Step 2: Make the Cheesecake Filling
4️⃣ Beat the cream cheese: In a large bowl, beat cream cheese, brown sugar, and flour until smooth.

5️⃣ Add pudding mix & wet ingredients: Mix in the butterscotch pudding mix, eggs (one at a time), vanilla extract, double cream, and sour cream until fully combined.

Step 3: Assemble & Bake
6️⃣ Stir in butterscotch chips: Fold 2 cups of butterscotch chips into the batter.

7️⃣ Pour over crust: Spread the cheesecake mixture evenly over the cooled crust.

8️⃣ Bake for 60–70 minutes, or until the center is just set.

Step 4: Cool & Garnish
9️⃣ Cool completely: Let cheesecake cool at room temperature, then refrigerate for at least 4 hours (or overnight).
