Chocolate Covered Strawberry Brownies

Ingredients:

For the Brownie Layer:

1 cup unsalted butter, melted
1 ¾ cups granulated sugar
3 large eggs
1 tsp vanilla extract
¾ cup unsweetened cocoa powder
1 cup all-purpose flour
½ tsp salt
½ tsp baking powder
1 cup semi-sweet chocolate chips

For the Strawberry Layer:

1 lb fresh strawberries, hulled and sliced
2 tbsp granulated sugar
1 tsp cornstarch


For the Chocolate Topping:

1 cup semi-sweet chocolate chips
2 tbsp heavy cream


Instructions:

Preheat the oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.

In a large bowl, whisk together the melted butter and sugar until smooth. Add the eggs and vanilla, whisking until fully combined. Sift in the cocoa powder, flour, salt, and baking powder, and gently fold the mixture until just combined. Stir in the chocolate chips.

Pour the brownie batter into the prepared pan and spread evenly. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Let the brownies cool completely.

Prepare the strawberry layer: In a small saucepan over medium heat, combine the sliced strawberries, sugar, and cornstarch. Cook for 5-7 minutes, stirring occasionally, until the strawberries break down and thicken. Let the mixture cool slightly, then spread it evenly over the cooled brownies.

Make the chocolate topping: Melt the chocolate chips and heavy cream together in the microwave in 20-second intervals, stirring in between until smooth. Pour the melted chocolate over the strawberry layer and spread evenly. Refrigerate for at least 30 minutes to set before slicing.

Tip: For an extra decadent touch, drizzle white chocolate over the top before serving. These brownies taste even better chilled!
