Cheese Pancakes
Savory Ham and Cheese Pancakes
Ingredients:
1. 1 cup all-purpose flour
2. 2 eggs
3. 1 1/4 cups milk
4. 2 tablespoons melted butter
5. 1/2 teaspoon salt
6. 1/4 teaspoon black pepper
7. 3.5 oz diced cooked ham
8. 3.5 oz grated cheese (Emmental or Gruyère work well)
9. Chopped parsley or chives (optional)

Instructions
1. In a bowl, whisk together flour, eggs, milk, melted butter, salt and pepper.
2. Add diced ham and grated cheese; mix gently.
3. Heat a non-stick pan over medium heat.
4. Drop tablespoonfuls of batter to form pancakes.
5. Cook 2-3 minutes per side, until golden brown.
6. Serve hot, garnished with parsley or chives if desired.
