Chocolate Blackberry Cupcakes

Dark Chocolate Blackberry Cupcakes

Decadent chocolate cupcakes enriched with fresh blackberries and adorned with a luxurious blackberry buttercream—an exquisite treat in every mouthful!

Ingredients

For the Cupcakes:

All-purpose flour
Unsweetened cocoa powder
Baking soda
Salt
Melted butter
Brown sugar
Eggs
Vanilla extract
Buttermilk
Hot coffee (or hot water)
Mashed blackberries

For the Frosting:

Softened butter
Powdered sugar
Blackberry purée (strained)
Vanilla extract
Heavy cream (if needed)

Instructions

Preheat the oven to 350°F (175°C) and prepare a cupcake pan with liners.
In a mixing bowl, combine the flour, cocoa powder, baking soda, and salt.

In a separate bowl, whisk together the melted butter and brown sugar, then incorporate the eggs, vanilla extract, and mashed blackberries.

Gradually alternate adding the dry ingredients and buttermilk, stirring gently to combine. Finally, mix in the hot coffee.
Fill the cupcake liners three-quarters full and bake for 18-20 minutes. Allow to cool completely.
In a mixing bowl, beat the softened butter, powdered sugar, blackberry purée, and vanilla extract until smooth.

Adjust the consistency with heavy cream if necessary.
Frost the cooled cupcakes and savor the delight!
