Team needed
Electric Blender.
Square or round mold (20×20 cm approx. ).
Baking paper.
Spatula and sieve.
Instructions
Prepare the mold: Preheat the oven to 160 °C (320 °F). Grease and line the mold with baking paper.
Mounting the whites: In a bowl, beat the whites with salt until they form firm peaks. Book up.
Mix the base: In another bowl, beat the yolks with sugar until pale and creamy. Add the melted butter and vanilla extract and mix.
Add cocoa and flour: Sift cocoa powder and flour over the yolk mixture. Integrate gently.
Increasing milk: Add warm milk little by little, beating until you get a liquid mixture.
Merge the clears: Insert the mounted clears into three parts. Blend gently, leaving visible lumps. This is key to the magic layers.
Baking: Pour the mixture into the prepared mold and bake for 50-60 minutes, until the center is barely firm. The top must be gold.
Cool down: Let it cool to room temperature. Then refrigerate for at least 2 hours for layers to settle.
Decorate and Serve: Carefully thaw and sprinkle grated chocolate or glazing sugar before serving.
Tips
Use warm milk to prevent butter from solidifying in the mixture.
Gently manipulate the clears to ensure the formation of layers.
