Strawberry Kiwi Cheesecake
Strawberry Kiwi Cheesecake (No-Bake Style)
Ingredients
Crust:
2 cups crushed digestive biscuits or graham crackers
½ cup melted butter
Cheesecake Filling:
2 cups cream cheese (softened)
1 cup heavy whipping cream (cold)
¾ cup powdered sugar
1 teaspoon vanilla extract
Fruit Topping:
2 cups fresh strawberries (sliced)
3–4 kiwis (sliced)
½ cup strawberry jelly or glaze
1 tablespoon honey or sugar (optional)

Instructions
1. Prepare the Crust:
Mix crushed biscuits with melted butter.
Press mixture firmly into the bottom of a springform pan.
Refrigerate for 20–30 minutes to set.
2. Make the Cheesecake Filling:
Beat cream cheese, powdered sugar, and vanilla until smooth.
In another bowl, whip the heavy cream until stiff peaks form.
Gently fold whipped cream into the cream cheese mixture.
Spread filling evenly over the chilled crust.
3. Add Fruit Decoration:
Place sliced strawberries and kiwi around the sides of the pan (facing outward).
Add more fruit on top of the cheesecake.
4. Add Glaze:
Warm the strawberry jelly slightly until pourable.
Pour or brush it over the fruit topping for shine and flavor.
5. Chill:
Refrigerate for at least 4–6 hours or overnight until firm.
Serving:
Remove from the springform pan.
Slice with a sharp knife and serve chilled.
