Moka Cake

Moka Cake

Chocolate and coffee are an ideal combination and nothing is a better example than mocha cake.  This is a moist, sweet and delicious dessert that can be enjoyed on any occasion.  And below, we show you an excellent recipe.

Ingredients

This cake is not very complex, but it does have a long list of ingredients that must be obtained, although most of them usually already have in the kitchen:

For cake

• 3 cups of all-purpose flour.

• 2 and ⅔ cup of sugar.

• 3 tablespoons of cocoa powder.

• 1 teaspoon salt.

• 1 tablespoon of baking soda.

• 1 and ½ teaspoon baking powder.

• ½ cup sour cream.

• ½ cup of buttermilk.

• 3 large eggs.

• 1 and ¼ cup of hot coffee (strong brew).

• ½ cup of water.

• ¾ cup of vegetable oil.

For the cream

• 450 grams of unsalted butter.

• 900 grams of powdered sugar.

• 1 tablespoon of cocoa powder.

• 1 tablespoon of espresso powder.

• 1 spoon of vanilla.

• 3 tablespoons of heavy cream.

• ½ teaspoon of salt.

Glazed

• ½ cup chopped dark chocolate.

• ¼ cup heavy cream,

Steps

Once the ingredients have been collected, preparation can begin by following these detailed steps.  Remember that you need 3 20 cm circular molds:

Step 1

Preheat the oven to 180ºC.  Also butter and flour the 3 molds and place waxed paper on the bases.

Step 2

In a large bowl, add all the wet ingredients for the cake and beat until smooth.  Then, sift the dry ingredients in and beat again to incorporate for at least 2 minutes.

Step 3

Then, pour the mixture evenly into the 3 molds and place in the oven for 40 minutes or until a toothpick inserted comes out completely clean.  Once the time has passed, remove from the oven and let them cool on a rack.

Step 4

For the cream, the sugar, salt, coffee and cocoa must be sifted into a container.  Then, add the butter and vanilla and beat them for 5 minutes with a paddle attachment to fully incorporate them.

Step 5

For the glaze, you should heat the heavy cream and then pour it over the chocolate.  Stirring so that all the pieces melt completely.

Step 6

Place the first cake on a tray and cover the surface with part of the cream and chocolate glaze.  Then, place the second cake and repeat.

Step 7

Then, place the third cake and cover the entire surface and sides with the cream and flatten it with a spatula.  Next, pour the rest of the chocolate glaze and level it again with a spatula.

With this, you will have prepared a delicious and beautiful mocha cake, with a strong chocolate and coffee flavor that complement each other and are perfect as a dessert for any occasion.  If you wish, you can garnish the cake with a little of the buttercream or espresso beans.  We invite you to try it.
