Figs in syrup

Figs in syrup are a delicious preserve that brings out the natural sweetness of the figs.  They are prepared by cooking figs with syrup, a mixture of water and sugar, until they acquire a soft and juicy texture.  This delicacy can be enjoyed alone, with cheese or as a complement to desserts and gourmet dishes.

Ingredients:

• 1 kg of fresh figs

• 500 g of sugar

• 500 ml of water

• 1 lemon (juice and zest)

• Optional: cinnamon stick or vanilla to flavor

Select ripe but firm figs to ensure a delicious texture.  Additionally, add a touch of cinnamon and lemon to the syrup to enhance the flavor of the figs.

Preparation:

• Wash the figs well and remove the ends.  You can leave them whole or cut them in half, depending on your preferences.

• Prepare the syrup: In a large saucepan, combine the sugar and water.  Bring the mixture to a boil over medium heat, stirring to dissolve the sugar.

• Once the syrup is boiling, reduce the heat to medium-low and add the figs.  If you decide to add cinnamon sticks or vanilla to flavor, this is the time to do it.

• Cook the figs in the syrup for about 30-40 minutes, or until they are tender and the syrup has thickened slightly.  Make sure to stir occasionally so that the figs are well coated with the syrup.

• Add the lemon juice and zest and cook for a few additional minutes.

• Remove the saucepan from the heat and let the figs cool in the syrup.

• Transfer the figs and syrup to sterilized jars.  Make sure they are completely submerged in the syrup.

• Store the jars in a cool, dark place.  Homemade figs in syrup can be preserved for several months.
