Chocolate Mascarpone Cheesecake

Chocolate Mascarpone Cheesecake is a decadent dessert that combines the rich flavors of chocolate and the creamy texture of mascarpone cheese. The velvety smooth chocolate filling is made with high-quality dark chocolate, creating a luscious and indulgent taste.

Ingredients

For the Oreo Crust:

24 Oreo cookies
1/4 cup unsalted butter, melted
For the Chocolate Mascarpone Cheesecake Filling:
(2) 8 ounce packages of cream cheese, VERY soft
(2) 8 ounce packages Mascarpone cheese, VERY soft
1/4 cup whole milk
3 large eggs + 2 egg yolks, at room temperature
1 and 1/2 cups granulated sugar
2 tablespoons unsweetened cocoa powder
8 ounces semi-sweet chocolate, melted and slightly cooled
2 teaspoons vanilla extract

For the Chocolate Ganache:

8 ounces semi-sweet chocolate, chopped
1/2 cup heavy cream
For the Whipped Cream:
1 cup heavy cream
1/4 cup confectioners’ sugar
1/2 teaspoon vanilla

Directions

Preheat oven to 325°F (163°C). Wrap a 9″ springform pan in multiple layers of heavy-duty tin foil; lightly grease with non-stick spray.
For the crust, pulse Oreos in a blender or food processor until fine crumbs. Stir in melted butter, press into the pan.
For the filling, beat cream cheese and mascarpone until smooth.

Beat in milk, then add eggs, yolks, and sugar. Add cocoa powder and vanilla, fold in melted chocolate.
Pour filling into crust, smooth top. Place in a water bath and bake for 1 hour and 20 minutes. Turn off oven, let sit for 45 minutes.

Remove, run a knife around edge, cool for 30 minutes, then refrigerate for 6 hours.
For ganache, heat cream, pour over chocolate, let stand, then whisk. Pour over cheesecake.

For whipped cream, beat heavy cream and sugar until semi-stiff peaks, add vanilla, dollop on cheesecake.
