Blueberry sponge cake

Blueberry cake is a delicious dessert that combines the softness of a cake with the freshness of blueberries.  Its texture is spongy and its sweet flavor with a touch of acid is irresistible.  It is perfect to enjoy at any time of the day.

Ingredients:

• 1 1/2 cups fresh or frozen blueberries

• 2 1/2 cups of wheat flour

• 2 teaspoons baking powder

• 1/2 teaspoon baking soda

• 1/2 teaspoon salt

• 1/2 cup (1 stick) butter at room temperature

• 1 cup of sugar

• 2 eggs

• 1 teaspoon vanilla extract

• 1 cup of Greek yogurt

• Powdered sugar (optional, to decorate)

Before making the blueberry cake, be sure to wash and dry the blueberries carefully to prevent them from breaking when mixed into the batter.

Preparation:

1. Preheat your oven to 180°C (350°F).  Grease and flour a cake pan or sponge cake pan.

2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.  Reserve this dry mixture.

3. In another large bowl, beat the butter and sugar until smooth and creamy.

4. Add the eggs one at a time, beating well after each addition.  Next, add the vanilla extract and lemon zest (if desired) and mix well.

5. Gradually fold the dry mixture into the butter and egg mixture, alternating with the Greek yogurt.  Start and end with the dry mixture.  Mix just until ingredients are combined;  do not over mix.

6. In a small bowl, gently toss the blueberries with a tablespoon of flour to prevent them from sinking into the batter.

7. Using a rubber spatula, gently fold the floured cranberries into the cake batter.

8. Pour the batter into the prepared pan and spread it evenly.

9. Bake in the preheated oven for approximately 45-50 minutes or until a toothpick inserted into the center of the cake comes out clean.

10. Remove the cake from the oven and let it cool in the mold for about 10 minutes before removing it from the mold.  Then let it cool completely on a rack.

11. Optionally, you can sprinkle a little icing sugar over the cooled cake before serving.
