Confetti cake

Confetti cake

This fluffy sheet cake not only looks delicious, but will delight everyone!

INGREDIENTS

FOR THE DOUGH

250 g soft butter
200g sugar
3 eggs (size M)
200 g sour cream
1 teaspoon lemon zest
1 pack of bourbon vanilla sugar
450g flour
½ pack of baking powder
1 tsp baking soda
150 g sugar sprinkles

FOR FROSTING

125g soft butter
250g powdered sugar
125g cream cheese
1 tsp vanilla extract
50g sugar sprinkles

PREPARATION

1st step
Mix the softened butter with sugar until fluffy, gradually add the eggs.  Add the sour cream and spices and mix in.  Mix the flour with baking powder and baking soda and sift into the dough.  Mix the dough well and mix in the sugar sprinkles by hand.

2nd step
Preheat the oven to 180 degrees (fan oven: 160 degrees).  Line a baking frame (35cmx24cm) with baking paper, pour in the confetti dough and bake for 30 minutes.

3rd step
For the frosting, beat the soft butter until fluffy and add the powdered sugar in 3 portions and beat until fluffy. 

Mix the cream cheese lightly and add about 2 tablespoons of the butter mixture to equalize the temperature, add the vanilla extract, then stir everything together until smooth. 

Spread the frosting onto the cooled confetti cake using a small angled palette and decorate with sugar sprinkles.  The cake makes approx. 24 pieces.
