Cod in the oven

The cod cooked in the oven is a brilliant recipe that you will love!  The fish is prepared with vegetables and everything comes out of the oven quickly.

INGREDIENTS

400 g cod fillet
a bit of salt
some pepper
1 medium zucchini
1 red pepper
1 yellow pepper
8 cherry tomatoes
1 clove of garlic
6 tbsp olive oil
1 organic lemon
1 teaspoon dried oregano

PREPARATION

1. For the cod from the oven, cut the cod fillet into equal pieces (2 pieces per person) and season all over with salt and pepper.  Wash the zucchini, halve lengthwise and cut into slices (approx. 0.5 cm thick). 

Wash both peppers, quarter them and remove the core.  Cut into 2 x 2 cm pieces.  Wash and halve the cherry tomatoes.

2. Peel the garlic clove and press it finely.  Mix the olive oil with the garlic clove.  Wash the lemon, grate the peel finely and mix with the garlic and olive oil.

3. Fry vegetables in a pan with olive oil for about 2 minutes over high heat, stirring constantly.  Season with salt, pepper and oregano and place in a baking dish. 

Preheat the oven to 185 degrees fan (200 degrees top and bottom heat).

4. Place the fish on top of the vegetables.  Drizzle vegetables and fish with the prepared garlic-lemon oil and place in the preheated oven.  Cook for 8 minutes.  Bon appetit!
