Apple cupcakes are so delicious. The pretty cupcakes with mascarpone frosting and caramel sauce are perfect for your next party. With our recipe you can easily make them yourself.
INGREDIENTS (For 12 cupcakes)
FOR THE DOUGH
1 large apple (approx. 200 g)
250g sugar
3 eggs (size M)
125 ml neutral oil (e.g. sunflower oil)
200 g wheat flour (Type 405)
50 g cornstarch
½ tsp baking powder
¼ tsp baking soda
½ tsp cinnamon
1 pinch of salt
FOR FROSTING
250g mascarpone
200 g cream
30g powdered sugar
2 tsp cinnamon
3 tsp cream stiffener
A little cinnamon for sprinkling if desired
FOR THE CARAMEL SAUCE
125g sugar
2 tbsp water
90g cream
80g butter
1 pinch of salt
PREPARATION
1st step
Preheat the oven to 180 degrees top/bottom heat. Line a muffin tin (12 wells) with paper cases. For the dough, wash the apples, quarter them and remove the core. Set aside an unpeeled apple quarter for decoration. Peel the remaining apples and cut them into small cubes.
2nd step
Beat the sugar and eggs in a mixing bowl until creamy, then stir in the oil. Mix the flour with starch, baking powder, baking soda, cinnamon and salt and sift into the dough. Mix everything briefly to form a smooth dough and finally fold in the apple pieces by hand.
3rd step
Divide the dough evenly between the prepared paper cases and bake in the preheated oven for about 20 minutes until golden brown. After baking, let the muffins cool completely on a wire rack.
