Apple banana muffins 🍎
Apple banana muffins are juicy, simple and really tasty. The little cakes from the tray are great to take with you. The perfect snack for on the go!
INGREDIENTS (For 12 muffins)
250 g wheat flour (Type 405)
125g brown sugar
2½ tsp baking powder
1 teaspoon vanilla sugar
1 pinch of salt
200 g cream
125 ml neutral cooking oil (e.g. sunflower oil)
2 eggs (size M)
1 medium apple
1 medium ripe banana
PREPARATION
1st step
Line a muffin tin (12 cavities) with paper cases and preheat the oven to 180 degrees top/bottom heat (fan oven: 160 degrees).
2nd step
Put the flour, sugar, baking powder, vanilla sugar and salt in a mixing bowl and mix by hand. Put the cream, oil and eggs in a mixing bowl and mix well.
3rd step
Wash, peel, quarter and core the apple and cut the apple quarters into fine cubes. Peel the banana and mash it with a fork.
First add the liquid ingredients to the dry ingredients and mix with them, then add the banana puree and the apple cubes to the dough and mix well.
4th step
Divide the dough between the prepared paper cases – each case should be no more than two-thirds full.
Bake the banana and apple muffins in the preheated oven for about 18 minutes until golden brown and then let them cool on a wire rack.
The muffins with banana and apple will keep in an airtight container at room temperature for at least 3 days.
