Chocolate streusel cake
This fine streusel cake is particularly impressive with its creamy filling of vanilla pudding and quark and some juicy cherries. We’ll show you how you can easily bake the delicious streusel cake yourself.
INGREDIENTS
FOR DOUGH AND STREUSEL
150 g soft butter
100 g sugar
1 egg (size M)
3 tbsp baking cocoa
250 g flour (type 405)
2 tsp baking powder
1 pinch of salt
Some butter for the mold
FOR THE FILLING
1 jar of morello cherries (drained weight 350g)
125 g soft butter
120 g sugar
2 eggs (size M)
500 g low-fat quark
1 pack of vanilla pudding powder
optional: some powdered sugar for sprinkling
PREPARATION
Step 1
For the dough, put all the ingredients in a bowl and knead into a dough using the dough hook of the mixer for about 5 minutes. Preheat the oven to 180 degrees (fan oven: 160 degrees). Grease a springform pan (Ø 26 cm). Put about 2/3 of the dough into the springform pan and press it into the pan, forming a rim about 3 cm high.
Step 2
For the filling, drain the morello cherries well in a sieve. Then spread the morello cherries on the dough base. Beat the butter and sugar until creamy, then gradually stir in the eggs. Add the quark and vanilla pudding powder and mix everything until no lumps are visible. Pour the filling over the cherries on the dough base.
Step 3
Pluck the remaining dough into small crumbles and spread them on the surface of the cake. Bake the crumble cake in the preheated oven for about 50-55 minutes until golden brown. Allow to cool completely, then remove from the pan. If you want, you can sprinkle the cake with a little powdered sugar before serving. The cake makes about 12 pieces.
