Mini Berliners

Mini Berliners, pancakes or Küchle: With this recipe you can finally make them yourself.  The Berliners made from yeast dough are filled with raspberry jam.

INGREDIENTS (For 18 pieces)

FOR THE DOUGH

350 g wheat flour (type 405)
1 pack of dry yeast (alternatively: 1/2 cube of fresh yeast)
50 g sugar
1 pinch of salt
100 ml lukewarm milk
50 g soft butter
2 eggs (size M)
Some flour for working

ALSO

750 ml neutral cooking oil for frying (e.g. rapeseed oil)
250 g seedless raspberry jam
50 g sugar for rolling

PREPARATION

Step 1
For the dough, mix the flour, yeast, sugar and salt in a mixing bowl. Add lukewarm milk, butter and eggs. Knead all ingredients with the dough hook attachment of a hand mixer for about 3 minutes to form a smooth dough. Cover and let rest for 45 minutes.

Step 2
Put the risen yeast dough on a lightly floured work surface and divide it into about 18 equal-sized pieces. Shape each piece into a ball and place it on a piece of baking paper. Cover and leave to rest for another 20 minutes until the balls have risen a little.

Step 3
For frying, heat the oil in a pan about 20 cm wide. This takes up to 5 minutes. The fat is hot enough when you dip a wooden spoon handle into the fat and lots of small bubbles form around the handle. Now set the stove to medium so that the fat doesn’t get too hot.

Our tip
Reuse cooking oil
Keep the empty cooking oil bottle. You can use a funnel to pour the completely cooled oil back into the bottle and fry with it at least two more times.
