Wild garlic cream soup

Incredibly creamy and delicious: The wild garlic cream soup is very quick to make and spoils you with aromatic wild garlic. A great recipe!

INGREDIENTS

1 medium-sized onion
1 medium-sized potato (floury)
4 tbsp olive oil
30 g butter
20 g flour
200 ml white wine
400 ml vegetable stock
200 g cream
80 g wild garlic
5 tbsp olive oil
1 pinch of salt
a little salt and pepper
1 tbsp lemon juice
a little wild garlic for decoration (or other herbs)

PREPARATION

1. Peel the onion and cut into cubes. Peel the potato in the same way and cut into cubes. Heat the olive oil in a pan and sweat the onion until it is colorless. Add the potato and fry briefly.

2. Add the butter and let it foam. Put the flour in the pan and stir in.  Deglaze with the white wine and let it boil almost completely. Top up with the stock and let it simmer until it is half full.

3. Add the cream and bring to the boil. Wash the wild garlic, dab it dry, remove the stalk, roughly chop the leaves and puree it with the olive oil and salt using a hand blender. Puree the soup until smooth and mix in the wild garlic oil while doing this.

4. Season with salt, pepper and lemon juice. Cut some wild garlic or other herbs into thin strips and add them to the soup just before serving. Enjoy!
