Coconut cake with chocolate chips
Coconut cake with chocolate chips is a delicious combination of flavors and textures. The softness of the coconut mixes perfectly with the intensity of the chocolate chips, creating an irresistible dessert for sweet lovers. Its aroma and exotic flavor make it a popular option to enjoy on any occasion.
Ingredients:
• 2 cups of wheat flour
• 1 cup of sugar
• 1 cup of grated coconut
• 1/2 cup chocolate chips
• 1 cup coconut milk (you can find it canned at the store)
• 1/2 cup vegetable oil
• 3 eggs
• 2 teaspoons baking powder
• 1 teaspoon vanilla extract
• 1/2 teaspoon salt
Make sure you have all the ingredients at room temperature for the best texture and carefully mix the chocolate chips into the batter so they are evenly distributed.
Preparation:
1. Preheat your oven to 180°C (350°F). Grease and flour a cake pan or use a springform pan and line the bottom with parchment paper to make removing the cake easier.
2. In a large bowl, mix the flour, sugar, shredded coconut, chocolate chips, baking powder and salt.
3. In another bowl, beat the eggs until well blended. Next, add the coconut milk, vegetable oil, and vanilla extract. Mix these liquid ingredients well.
4. Pour the liquid mixture over the dry ingredients and stir until well combined. Do not mix excessively, just enough for the ingredients to integrate.
5. Pour the mixture into the prepared mold and spread it evenly.
6. Bake in the preheated oven for approximately 40-45 minutes, or until a toothpick inserted into the center comes out clean.
7. Once ready, remove the cake from the oven and let it cool in the pan for about 10-15 minutes before removing it from the pan. Then place it on a wire rack to cool completely.
8. Once the coconut chocolate chip cake is completely cool, it is ready to serve! You can sprinkle some extra shredded coconut or chocolate chips on top if you like.
Enjoy your delicious coconut and chocolate chip cake!
